Plov is a classic dish of the region and Azerbaijani are known for the meticulous methods of preparing it. Typical plov is usually cooked with:

  • 500 grams of beef chuck or beef sirloin
  • 0.35 cup of canola oil, or extra light olive oil 
  • 2 medium onions
  • 3 medium carrots
  • 1 teaspoon salt for meat and 1.5 teaspoons salt for rice
  • Half a teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 3-4 bay leaves
  • 3 cups long-grain rice (saffron-flavored rice)
  • Hot water
  • 1 head of garlic
  • 1 teaspoon ground coriander
